Filipino Chicken Adobo

When I'm feeling homesick (FYI i haven't been out of the country since 2007) I make Chicken Adobo. Something so easy to make that tastes magical in your mouth. I also make this dish when I'm invited to parties! There's so many ways to make this dish, so this one is my version. Anybody who plans on making a trip to Philippines needs to give this a try. I'm doing your stomach a big favor.
Chicken Adobo is NOT complete without RICE!

What you'll need:
Measuring Cup
1/3 Cup of White Vinegar
1 Cup of Soy Sauce 
1 Tablespoon of Ground Black Pepper 
Whole Garlic Bulb
1 Whole Onion (Optional)
4 leaves of Bay Leaves
3 Chicken Thighs and 3 Drumsticks (with the skin!)
Vegetable Oil
Large Cooking Pot

Oh Sweet Jesus on a Unicycle. So Good!

1. Mix the soy sauce and vinegar, ground black pepper, and bay leaves. Also chop up the garlic and whole onions
2.  Marinade the chicken thighs and drumsticks in the mix for about an hour
3. On a large cooking pot, heat up the stove to medium-high and pour in 2 tablespoons of vegetable oil.
4. Put the chicken on the pot and let it cook till it's golden brown for about 30 minutes. If there is extra sauce from the marination, save it for later.
5. Once all the chicken is done, remove them,
6. Cook the garlic and onions till brown
7. Add the chicken back into the pot with the onions and garlic. Add the marinade w/ the bay leaves and let it all simmer for 15-20 minutes.
8. When done, serve it with fresh cooked white rice :)
